Vineyard
The grapes are harvested late in Autumn, for granting a long dry sun exposition.
Aging
From 6 to 12 months in steel tanks.
12 months maturation in big barrels and barrique.
12 months aging in the Guinness World Records “Biggest Barrel in the World” made of mixed woods coming from several countries.
Long period of refinement in glass bottles.
Vinification
Grapes are raisin-dried for at least 4 months after harvesting, losing at least 40% of their weight.
Fermentation temperature between 18 and 22° C.
Maceration time: 25 days.
Food Pairing
A perfect companion for roasts, red meat, game, ripe cold cuts and cheeses. Excellent partner to grilled meats. Great as meditation wine or as final of dinner.
To be uncorked at least two hours before serving.
